Aunty Sandy’s Banana Bread Recipe


  • 3 ripe bananas, mashed
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup unsalted butter, softened
  • 1 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup buttermilk (or regular milk with a teaspoon of lemon juice or white vinegar)
  • 1/2 to 1 cup chopped nuts (walnuts or pecans are optional)
  • 1/2 to 1 cup chocolate chips


  1. First, heat your oven to 350°F (175°C) and then grease and lightly flour a 9x5-inch loaf pan.
  2. In a medium bowl, combine the flour, baking soda, and salt, then set this mixture aside.
  3. Next, in a larger mixing bowl, cream the softened butter and sugar together until the mixture is light and fluffy.
  4. Beat in the eggs one at a time, making sure to mix well after each addition.
  5. Mix in the mashed bananas and vanilla extract.
  6. Gradually add the dry ingredients to the wet mixture, alternating with the buttermilk, starting and ending with the dry ingredients. Stir until just combined to prevent overmixing.
  7. If you like, fold in the chopped nuts or chocolate chips at this point.
  8. Pour the batter into the greased and floured loaf pan, smoothing the top.
  9. Bake in the preheated oven for 60-70 minutes, or until a toothpick inserted into the center comes out clean or with a few moist crumbs attached.
  10. Let the banana bread cool in the pan for about 10 minutes, then remove it to a wire rack to cool completely before slicing.

A Few Tips:

1. Be careful not to mix the batter too much to keep it soft.

2. Use a toothpick to check if it's baked. If it comes out clean or with a few crumbs, it's ready.

3. Cover with foil if it's browning too much, around halfway through baking, to prevent burning.

4. Store it in a sealed container at room temperature for up to three days. You can also freeze slices to enjoy later.
