  • 1.25 kg beef face/skin, cleaned, boiled, cut into cubes
  • 1.25 kg ox feet, cleaned, boiled, cut into cubes
  • 3 L Water
  • Achuete seeds
  • 30 g white onions, quartered
  • 45 g annatto oil
  • 25 g chopped garlic
  • 31 g chopped ginger
  • 200 g diced red onions
  • 40 g tomato paste
  • 1.5 L reserved beef stock
  • 390 g canned pork and beans
  • 2 whole green chillies
  • 100 g washed black beans
  • 1/3 cup peanut butter
  • 1 can diced pineapple
  • 1 medium red bell pepper cut into strips
  • 1 teaspoon chopped red chili
  • 1 tablespoon salt

Directions:

1. In a pressure cooker, cover all the meat with water. Add salt and ginger pieces. Cook under pressure for 40-60 minutes, or until the meat is tender.

2. Strain the meat, keeping the broth. Set both aside.

3. Heat annatto oil in a large frying pan over high heat. Add achuete seeds, frying until the oil turns deep orange. Discard the seeds.
