Banana Wine Recipe

Equipment:

  • 2 large saucepans
  • potato masher
  • ladle
  • sieve
  • muslin cloth (or a clean pillowcase/tea towel)
  • funnel
  • 4.5-liter demijohn (or fermenting bucket)
  • airlock (a device used in the fermentation process for beverages)

Note: All equipment must be sterilized, except the saucepans.

Ingredients:

  • 1.2 kilograms ripe bananas (the older and browner, the better)
  • 200 grams sultanas (also known as dried grapes)
  • 900 grams sugar
  • 1 lemon
  • 1 black tea teabag
  • wine yeast

Instructions:

  1. Pour approximately 4 liters of water into your largest saucepan.
  2. Roughly chop the bananas, including the skin, and add them to the water along with the sultanas.
  3. Gradually bring the mixture to a boil, then reduce the heat to let it simmer gently.
  4. While the mixture simmers, boil water in a kettle and steep the teabag in a mug to brew a strong tea.
  5. Squeeze the juice from your lemon into the simmering mixture.
  6. After 5 minutes of simmering, use a potato masher to mash the ingredients. Continue until there are no large chunks left. Avoid splashing.
  7. Remove the teabag and add the brewed tea to the pan, stirring to incorporate.
  8. Turn off the heat and cover the pan with a lid or tea towel. Let the mixture cool slightly, or leave it overnight for enhanced flavor.
  9. Once cooled, strain the mixture through a sieve lined with muslin cloth into a clean pan, avoiding pressing too hard.
  10. Reheat the strained liquid, dissolve the sugar by stirring gently, then allow it to cool to a safe handling temperature.
  11. Pour the cooled liquid into a sterilized demijohn using a funnel. Seal it with an airlock to prevent contamination.
  12. If using Pectolase, add this ingredient to help clear the wine more quickly.
  13. Sprinkle wine yeast into the demijohn as recommended on the packaging.
  14. Place the demijohn in a warm, dark place, like an airing cupboard, to ferment.
