Beef Afritada Recipe


  • 1/4 cup oil
  • 2 medium potatoes, peeled and quartered
  • 1 large carrot, peeled and cut into cubes
  • 1/2 green bell pepper, seeded and cut into 1-inch cubes
  • 1/2 red bell pepper, seeded and cut into 1-inch cubes
  • 2 pounds beef chuck, cut into 2-inch cubes
  • 1 onion, peeled and chopped
  • 4 cloves garlic, peeled and minced
  • 1 tablespoon fish sauce
  • 1 can (15 ounces) crushed tomatoes
  • 1 tablespoon tomato paste
  • 2 cups water
  • salt and pepper to taste

  1. Heat oil in a skillet over medium heat. Add potatoes and carrots, and cook until lightly browned, turning occasionally. Drain on paper towels.
  2. Leave about 2 tablespoons of oil in the pan. Add bell peppers, cook for 30 to 45 seconds, then drain on paper towels again.
  3. Increase heat to medium-high. Cook beef for 2 to 3 minutes, turning once, until it lightly browns. Remove from heat and keep warm.
  4. If needed, add another tablespoon of oil to the pan. Cook onions and garlic until they soften.
  5. Return the beef to the pan, pour the fish sauce, and cook for 1 to 2 minutes.
  6. Stir crushed tomatoes, water, and tomato paste into the pan until well combined. Bring to a boil.
  7. Reduce the heat, cover, and simmer for 1 1/2 to 2 hours until the beef tenders. Add water in half-cup increments if the sauce dries out.
  8. Add potatoes and carrots and cook for 4 to 5 minutes until vegetables become tender and the sauce slightly thickens.
  9. Mix in the bell peppers and cook for one minute until they become tender yet crisp.
  10. Season with salt and pepper to taste. Serve hot and enjoy!
