Cardiff Crack Recipe

Ingredients:

  • 2 cups red wine
  • 3 pounds beef tri-tips (trimmed and cleaned)
  • 3 garlic cloves (minced)
  • 1/4 cup olive oil
  • 1/4 cup soy sauce
  • 1 tablespoon ground black pepper
  • 1 teaspoon paprika
  • 1/2 teaspoon mustard powder
  • 1 teaspoon honey

Instructions:

  1. Combine red wine, minced garlic, olive oil, soy sauce, black pepper, paprika, mustard powder, and honey in a large Ziploc bag. Seal the bag and shake until well combined.
  2. Marinate the tri-tip and refrigerate for six to eight hours, or overnight. Ensure the marination process does not exceed 24 hours.
  3. Preheat your grill to high heat on one side and low heat on the other.
  4. Discard the marinade and place the tri-tip over the hot grill. Sear both sides for one to two minutes.
  5. Grill for 10-15 minutes per side, or until a thermometer registers your desired temperature (140°F for medium-rare).
  6. Remove the tri-tip from the grill, cover it loosely with foil, and let it rest for 15-20 minutes before slicing against the grain for maximum tenderness.
  7. Serve and enjoy!
