Coco Ichibanya Curry Recipe

Ingredients:

  • 1 1/2 large onions, julienned
  • 2 tablespoons neutral oil
  • 4 tablespoons unsalted butter, divided
  • 2 tablespoons carrot, grated
  • 1/2 apple, grated
  • 1 cup low-sodium chicken stock
  • 1 cup water
  • 2 curry blocks (Japanese curry roux)
  • 1 teaspoon curry powder (preferably Madras curry)
  • 1 tablespoon mango chutney (substitute with honey)
  • 1/2 tablespoon Bulldog fruit & vegetable sauce (substitute with ketchup)
  • 1/2 tablespoon Worcestershire sauce (preferably Bulldog brand)
  • 1 1/2 tablespoons dark soy sauce
  • 1/4 teaspoon white pepper

Instructions:

  1. In a medium-sized pot, combine 2 tablespoons of oil and 2 tablespoons of unsalted butter. Heat over low heat until the butter melts completely.
  2. Add the julienned onions to the pot. Cook on low heat for 40 to 45 minutes, stirring occasionally. The goal is to achieve a dark brown, caramelized texture without burning the onions.
  3. Once the onions are caramelized, add the grated carrots and grated apple to the pot. Increase the heat slightly to medium-low and cook for 2 to 3 minutes. Let the apple moisture evaporate completely.
  4. Add the low-sodium chicken stock and water to the pot. Bring it to a boil, then reduce the heat to simmer. Add the curry roux blocks to the simmering liquid and continue simmering for 5 to 10 minutes, or until the curry thickens.
  5. Stir in the mango chutney, the Bulldog fruit & vegetable sauce (or ketchup as a substitute), Worcestershire sauce, dark soy sauce, and white pepper.
  6. Blend the curry mixture until smooth using an immersion blender. Mix in the remaining 2 tablespoons of butter until well incorporated. Now you have your own Coco Ichibanya-inspired curry!
