Gigli Pasta Recipe: Try This Gigli Pasta with Chickpeas

Ingredients:

  • 200 g Gigli pasta
  • 2 tablespoons ground cumin
  • 3 tablespoons olive or vegetable oil
  • 400 g chickpeas drained
  • ½ Onion Diced
  • ½ teaspoon chilli flakes
  • 2 garlic cloves sliced
  • Salt and pepper to taste
  • 1 small Lemon zest and juice
  • 3 tablespoons smoked chili harissa or tomato paste
  • 1 tablespoon Dukkah Optional

Instructions:

1. Cook pasta according to package instructions (7 - 8 minutes). Drain, reserving 75 ml of the pasta water, and set aside.

2. Heat oil in a pan over medium heat, then add garlic, ground cumin, onion, lemon zest, salt, and pepper. Cook for 4 - 5 minutes.

3. Stir in harissa, chili flakes, and chickpeas. Cook over high heat for 8 minutes.

4. Add cooked pasta to the pan. Prepare stock using the reserved pasta water and additional boiled water, then add it to the pasta along with lemon juice. Cook over medium-low heat for 6 - 7 minutes.

5. Divide the mixture between bowls and sprinkle with dukkah before serving.
