Grilled Graffiti Eggplant Recipe with Roasted Tomatoes, Chickpeas, and Zesty Ginger

Ingredients:

  • 1 dry pint of cherry tomatoes
  • ½ teaspoon salt
  • 2 small graffiti eggplants
  • 2 tablespoons grated ginger
  • 2 minced garlic cloves
  • 3 tablespoons extra virgin olive oil
  • 1 sliced small onion
  • 1 cup chickpeas
  • ½ teaspoon crushed red pepper
  • ½ cup freshly chopped flat-leaf parsley

(Serves: 4-6)

Instructions:

1. Preheat the oven to 400°F.

2. In a bowl, coat cherry tomatoes with extra virgin olive oil and season with a pinch of salt and pepper. Arrange them on a baking sheet and bake for approximately 20 minutes until they burst.

3. Slice the eggplant into ¼-inch thick pieces. Brush both sides with extra virgin olive oil and sprinkle with kosher salt and black pepper. Grill each side for approximately 3-4 minutes until tender.

4. While the eggplant cooks, heat extra virgin olive oil in a sauté pan over medium heat. Sauté garlic and onions for 3 minutes, then add tomatoes and chickpeas. Season with salt and crushed red pepper, then stir in ginger and parsley.

5. Cook on medium heat, stirring frequently, for about 10 minutes until the flavors meld. Once done, spoon the mixture over the grilled eggplant. Serve as a side or main vegetarian dish. Enjoy!
