Legend has it that Maritozzo stems from a charming custom where hopeful grooms would present these delectable treats to their betrothed on Valentine's Day. Some even tucked love tokens inside, adding an extra dash of affection to these already delightful pastries. Maritozzi, pronounced as "ma-ree-tot-zi," is the plural form of the pastry.

What sets Maritozzo apart is its texture—toasty golden crust embracing a soft, fluffy center, complemented by a decadent whipped cream filling. And the best part? You can easily bring this Italian delight into your home kitchen! Here is the Maritozzo recipe!

Maritozzo Recipe

Ingredients for the Dough:

  • 3 1/2 cups all-purpose flour (500 grams)
  • 2 teaspoons active dry yeast (11 grams)
  • 100 grams soft butter cut into cubes
  • 1/3 cup sugar (70 grams)
  • 2/3 cup lukewarm milk (160 milliliters)
  • 2 large eggs
  • pinch of salt
  • 1 teaspoon vanilla extract

Ingredients for the Syrup:

  • 1/3 cup water (80 milliliters)
  • 1/3 cup sugar (70 grams)

Ingredients for the Vanilla Cream:

  • 2 cups very cold whipping cream (500 milliliters)
  • 1/3 cup powdered sugar (40 grams)
  • 3 tablespoons vanilla instant pudding powder (30 grams)
  • 1 teaspoon vanilla extract

Ingredients for Brushing and Decoration:

  • 1 beaten egg (brushing)
  • powdered sugar (decoration)

Instructions for the Dough:

  1. Combine flour, yeast, butter, sugar, milk, eggs, vanilla, and salt in a mixer bowl. Knead on low speed for 12-15 minutes until the softness of the dough is obtained.
  2. With the dough, form a ball and place it in a bowl. Cover and allow it to rise for 1-2 hours or until the dough doubles in volume.
  3. Transfer the dough to a work surface and divide it into 2 parts.
  4. Roll each piece into a chunky strip and cut it into 6 units, yielding a total of 12 rolls.
  5. Roll the pieces of dough into balls and place them at intervals on a baking tray lined with baking paper.
  6. Cover and let the rolls rise for about half an hour or until they almost double in volume.

Instructions for the Syrup:

  1. Place water and sugar in a saucepan and heat until boiling completely.
  2. Cook the syrup for 1-2 minutes at a strong boil to slightly reduce it.
  3. Cool completely to room temperature.

Instructions for Baking the Maritozzo:

  1. Preheat the oven to 170 degrees °C.
  2. Gently brush the rolls with a little beaten egg.
  3. Bake for 12-16 minutes or until the rolls are golden on top and set to the touch.
  4. Brush the hot rolls with the cold syrup and let them cool completely until they reach room temperature.

Instructions for the Vanilla Cream:

  1. In a mixer bowl with a whipping attachment, place cream, powdered sugar, vanilla pudding, and vanilla extract.
  2. Beat the mixed ingredients on high speed until a very uniform and stable cream is obtained.

Instructions for Serving the Maritozzo:

  1. Using a knife, slice the rolls in the center, but leave them attached at the bottom.
  2. With a plastic baking card, fill it with cream and smooth the exposed part so that it has a uniform appearance.
  3. If there is any leftover cream on the rolls, you can wipe them off.
  4. Garnish with powdered sugar generously and serve immediately.

A Few Tips:

  • Pair with a cappuccino, espresso, or Italian hot chocolate.
  • Enjoy as a dessert with a simple strawberry compote or baked fruit.
  • Refrigerate in an airtight container for two to three days or freeze for up to three months.
  • After refrigeration, let it come to room temperature first to ensure the bun isn't too firm or cold.
