Marie Callender’s Chicken Pot Pie Recipe

Ingredients for the filling:

  • 1 cup water, divided (3/4 and 1/4)
  • 7 ounces boneless, skinless chicken breasts, cubed
  • 1 1/2 ounces carrots, diced
  • 2 3/4 ounces celery, thinly sliced
  • 5 1/2 ounces red onion, finely chopped
  • 1 tablespoon chicken bouillon powder
  • 1/4 teaspoon ground black pepper
  • 1/4 cup unsalted butter
  • 2 tablespoons cornstarch
  • 2 teaspoons all-purpose flour
  • 1/2 cup heavy whipping cream
  • 1/2 cup frozen peas

Ingredients for the Crust:

2 balls of prepared and chilled pie crust, 10 ounces each

Instructions for the filling:

  1. Preheat your oven to 400 °F.
  2. Combine 3/4 cup of water, succulent chicken pieces, diced carrots, chopped celery, and finely sliced onion in a medium saucepan. Bring the mixture to a boil to meld the flavors.
  3. After achieving a boil, reduce the heat and let the mixture simmer for about 10 minutes. Stir occasionally to ensure even cooking and flavor distribution.
  4. Sprinkle chicken bouillon powder, a dash of black pepper, and a knob of butter into the simmering saucepan.
  5. Create a smooth slurry by dissolving cornstarch and flour in the remaining 1/4 cup of water. Stir this slurry into the pot and continue simmering for another 3 minutes. The mixture will thicken to the perfect consistency for a pie filling.
