  • 3 cloves garlic, minced
  • 1 quart beef stock
  • 2 sprigs rosemary, fresh
  • ½ cup red wine
  • salt and freshly ground black pepper

Directions

1. Allow the meat to reach room temperature by letting it sit out for 30-40 minutes if it has been in the refrigerator.

2. Truss the roast using butcher twine and generously season it with salt and pepper.

3. Preheat a cooking pot, ensuring it's spacious enough for the roast.
