Mulberry Wine Recipe With Honey


  • 3 pounds fresh mulberries
  • 1 teaspoon yeast nutrient
  • 8 ounces light raisins
  • 1 Campden tablet
  • 3 pounds of honey
  • 1 ½ cups orange juice (for yeast starter)
  • 1 teaspoon pectic enzyme
  • 1 packet Champagne yeast


1. Heat the honey in two quarts of water until boiling, then remove any foam.

2. Mash the berries and add them, along with the chopped raisins, into the primary fermenter.

3. Once the boiled honey and water have cooled to a safe temperature, pour them into the fruit mixture.

4. Crush the Campden tablet and mix it into the primary fermenter.

5. Incorporate the pectic enzyme into the mixture.

6. Allow the mixture to sit for 24 hours.

7. Prepare the yeast starter by combining the yeast, yeast nutrients, and orange juice in a suitable bottle. Ensure the orange juice is approximately 80 °F.

8. Shake the bottle thoroughly to mix the ingredients, then loosen the top.

9. If you're making batches larger than one gallon, incorporate an extra teaspoon of yeast nutrient into the primary fermenter.

10. Let the yeast starter rest for 1 to 2 hours until it becomes bubbly, then stir it into the primary fermenter.

11. Stir the fermenting melomel 2 or 3 times daily initially, and then once daily until fermentation slows.

12. After primary fermentation, typically lasting about a week with Champagne yeast, strain and discard the berries.

13. Transfer the melomel to the secondary fermenter, adjusting the volume with water if needed. Install the water seal.

15. Bottle the wine once it becomes still and clear.

16. For best results, allow the mulberry wine to age for one to two years.
