Pan-Seared Vermilion Snapper Recipe

Ingredients:

  • vermilion snappers (amount of your choice)
  • 2 tbsps avocado oil
  • salt
  • pepper
  • flour
  • minced garlic
  • parsley
  • butter
  • capers
  • lemon
  • thyme
  • white wine of your choice

Directions:

1. Pat the vermilion snapper dry, ensuring there is no moisture on the fish so it doesn't steam while cooking.

2. Season both sides of the fish with salt and pepper.

3. Pour flour onto a plate and lightly dredge the vermilion snapper in the flour. This will ensure the moisture is kept inside the fish during pan-searing while giving it a delicious crispy coating.

4. Bring a large pan with avocado oil to medium heat and sear the fish skin-side down once the oil simmers.

5. Gently flip the fish, ensuring not to break it, onto its other side after 4 minutes. If the fish is not easy to move, it needs a little more time to fry. Once the vermilion snapper's skin is crispy, you should be able to flip it.

6. Pan-sear the other side of the vermilion snapper for 4-5 minutes, then allow the fish to rest on low heat for an additional 5 minutes before removing it from the pan.

7. Lower the heat and melt butter, stirring it until the foam subsides.

8. Add capers, thyme, and garlic, sautéeing them until the garlic becomes fragrant.

9. Squeeze the juice of a fresh lemon into the pan, followed by the white wine of your choice.
