  • 4 tablespoons all-purpose flour, divided
  • 3/4 teaspoon salt, divided
  • 3/4 teaspoon ground black pepper, divided
  • 1 1/2 pounds beef tips
  • 2 tablespoons olive oil, divided
  • 2 (4-ounce) packages sliced gourmet blend mushrooms
  • 1/2 cup diced onion
  • 1 teaspoon minced garlic
  • 1/2 cup beef broth
  • 1/2 cup dry white wine
  • 3/4 cup sour cream
  • 2 tablespoons heavy whipping cream
  • 1 (12-ounce) package medium egg noodles, cooked according to package directions
  • Fresh thyme for garnish

Instructions

  1. In a large bowl, combine 2 tablespoons of flour with 1/2 teaspoon each of salt and pepper. Toss the beef tips in this mixture until evenly coated.
  2. Heat 1 tablespoon of oil in a large skillet over medium-high heat. Add the beef and cook for about 5 minutes per side, until lightly browned. Once done, remove from the pan and set aside.
  3. In the same skillet, heat the remaining tablespoon of oil. Add the mushrooms, onion, and garlic, cooking them for approximately 5 minutes, until softened. Stir in the remaining 2 tablespoons of flour and cook for an additional 2 minutes.
  4. Pour in the broth, wine, and the remaining 1/4 teaspoon each of salt and pepper. Let it simmer for about 3 minutes.
  5. Return the beef to the skillet and bring everything to a boil. Reduce the heat and simmer for 10 minutes.
  6. Stir in the sour cream and whipping cream, cooking until heated through.
  7. Serve the stroganoff over the cooked egg noodles and garnish with fresh thyme, if desired.
