  • 1 cup matki (moth beans), soaked and sprouted
  • ½ cup coconut milk
  • 1 tablespoon avocado oil (or any neutral oil)
  • 1 medium red onion, diced
  • 1 teaspoon sugar
  • 4 cloves garlic, minced
  • 1 large tomato, diced
  • 1 large potato, diced into small pieces
  • 1 teaspoon cayenne pepper (adjust to taste)
  • ½ teaspoon turmeric (optional)
  • 2 tablespoons cilantro, chopped
  • Salt, to taste

For the Goda Masala:

  • 1 tablespoon coriander seeds
  • 1 teaspoon sesame seeds
  • 4 cloves
  • 4 green cardamom pods
  • 2 inches of cinnamon
  • 2 bay leaves
  • 10 peppercorns
  • ¼ cup coconut shreds


  • In a dry skillet, toast coriander seeds, sesame seeds, cloves, cardamom, cinnamon, bay leaves, and peppercorns until they are lightly browned and fragrant.
  • Add the coconut shreds last, watching carefully to avoid burning.
  • Allow the spices to cool, then grind to a fine powder using a spice grinder.
  • Heat the oil in a saucepan over medium heat. Add the diced onions and sugar, cooking until the onions are golden and slightly caramelized, about 5 minutes.
  • Stir in the minced garlic and cook for another minute.
  • Add the diced tomato, homemade Goda masala, cayenne pepper, and turmeric. Cook the mixture until the tomatoes soften and start to release their oils.
