Ingredients:

  • 1 pound of thinly sliced beef steaks
  • 3 tablespoons of flour, used for dredging
  • 3 tablespoons of olive oil
  • 3 cloves of garlic, peeled and crushed
  • 2 tablespoons of freshly chopped basil
  • 1 can (14 ounces) of Italian plum tomatoes, hand crushed with their juices
  • Salt and pepper, to taste

Instructions:

1. Trim excess fat from the steaks and notch the edges slightly with a sharp knife to prevent curling during cooking. Pat the meat dry and lightly dredge it in flour. Discard any unused flour.

2. In a large heavy skillet, heat 2 tablespoons of oil with garlic over medium heat. Once the cloves turn golden, increase the heat to high. Push the garlic to the side and add the meat to the skillet. Brown the meat quickly on both sides. Remove the meat from the pan and set aside.

3. Add the tomatoes to the skillet with the remaining oil and basil. Season with salt and pepper. Cook over medium heat for about 10 to 15 minutes until the liquid thickens and reduces. Remove and discard the garlic cloves.

4. Return the steaks to the pan, covering them with the sauce. Place a lid over the pan and cook for an additional 4 to 5 minutes or until the steaks are cooked through.

5. Serve immediately.
