In early 2021, Uncle Roger, the YouTube sensation known for his hilariously critical reviews of fried rice recipes, finally shared his own much-anticipated Uncle Roger egg-fried rice recipe.

Rising to fame in 2020, Malaysian comedian Nigel Ng, better known as Uncle Roger, has captivated millions with his unique take on cooking reviews.

Known for his humorous critiques, he turned the tables in 2021—celebrating reaching (and surpassing) a staggering 3 million subscribers on YouTube—by sharing his version of the perfect egg-fried rice. So, without further ado, here is Uncle Roger's fried rice recipe.

Uncle Roger's Fried Rice Recipe

Ingredients:

  • 5 garlic cloves, minced
  • 1 shallot, diced
  • 1 egg and 1 egg yolk, whisked with chopsticks
  • 1 spring onion, chopped
  • 1 red chili pepper, chopped
  • leftover Hainanese chicken rice
  • soy sauce
  • Asian sesame oil
  • Sasa MSG
  • peanut or vegetable oil

Instructions:

1. Over medium heat, coat your wok with oil. Uncle Roger uses peanut oil but also accepts vegetable oil. Once it starts smoking, discard the oil, then add more for cooking.

2. Sautee garlic and shallot until fragrant, then add the egg and stir continuously.

3. Once the egg is almost fully cooked, add the rice, and stir. If the mixture is dry, add a bit more oil.

Tip: When you stir, ensure you flatten the rice so it doesn't clump together.

4. Add soy sauce, stir to distribute it evenly, then add sesame oil.

5. Drizzle MSG (the most important ingredient according to Uncle Roger) on your egg-fried rice and stir to distribute evenly.

6. Stir in chili and spring onion. Once everything is well combined, toss your egg-fried rice.
