For the Fudge Frosting:

  • 2 cups (452 g) unsalted butter, softened
  • 2 ½ cups (300 g) powdered sugar, sifted
  • 1 ¼ cups (150 g) dark or Dutch-processed cocoa powder, sifted
  • ½ cup (120 g) full-fat sour cream, at room temperature
  • ½ cup (120 g) hot water
  • 2 teaspoons vanilla extract
  • A pinch of fine sea salt
  • 10 ounces (280 g) 60-70% dark chocolate, melted and cooled to lukewarm

Directions:

  • Begin by preheating your oven to 350ºF (177ºC).
  • Butter and line two 8-inch round baking pans with parchment paper, also buttering the parchment.
  • In a large mixing bowl, whisk together the granulated sugar, flour, cocoa powder, baking soda, baking powder, and salt.
  • To the dry mixture, add eggs, buttermilk, boiling water, oil, and vanilla extract.
  • Using an electric mixer on medium speed, beat until you achieve a smooth, well-incorporated batter. Divide this batter evenly among the prepared pans.
