  • 1 1/2 tbsp maple syrup⁣
  • 1 tbsp red chili flakes
  • 1/3 cup + 2 tablespoons unsalted creamy cashew butter⁣
  • squeezed juice of 1 lime ⁣
  • 1 tbsp fine grain sea salt + more to taste ⁣
  • 1/4 cup water⁣

Assembly Ingredients:

  • 2 cups arugula⁣
  • 1/2 cup shredded rotisserie chicken
  • 2 tbsp chopped almonds⁣
  • 1/2 cup cooked wild rice (cook in well-salted water)⁣
  • 1/4 cup cilantro⁣
  • 1 shredded carrot⁣
  • 1/4 cup chopped purple cabbage⁣
  • 1/4 cup sliced cucumber⁣
  • 1/2 cup crispy rice ⁣
  • juice of 1 lime⁣

Cook the rice: Boil water, then add salt and rice and simmer for approximately 45 minutes. Once done, drain the remaining water from the rice and rinse with cold water.
